Grilled Chicken!

My kids and I love to eat grilled chicken. It’s lean, quick and healthful.

Quick and easy marinade for grilled chicken:

4lbs chicken, thighs with the leg.
1/2 cup Olive oil
2-3 🍋 fresh squeezed lemon juice
4tbspns Thyme (enough to sprinkle everywhere on chicken)
Duck sauce or sweet chili.
Coat chicken with lemon juice, Olive oil and thyme.
Allow to marinate for at least 20 minutes. (I keep my chicken like this for several days ready for the grill)

Heat grill to hot…
At least 20 minutes.
Add wood chips to grill. I used hickory but any fruit wood should be nice.

Place chicken bone side down. Grill for 15 minutes closed top.
I like a little crunch, so I flip the chicken and go for another 5 minutes. Meat side down basted with sweet chili sauce.

For the last 5 minutes on each side, baste with duck sauce or sweet chili.

Cook to at least 165 internal temperature, but anywhere below 190F should be ok. I like 173F.

Corn on the cob…
Olive oil and salt. Wrap and place over the bbq. Nothing else but time and patience. Takes about half an hour.
